I'm having a moment with quick breakfast Ideas. As a fan of hot apples I came up with this healthy idea: Breakfast Apple Strudel.
For this Recipe you will need:
- 1 Apple
- Oats
- Cinnamon
- Flax seeds (optional)
- Vanilla (optional)
(Excuse the quality of the pictures - it was kinda dark in my kitchen)
Decore your apple and cut it in quarters. Leave on the skin for now.
Take a grater, lay the apple flat on it and start grating. You will reach a point when the skin of the apple will protect your fingers and you can grate the last bit of meat off it.
Add the grated apple to the oats and season with Cinnamon. Personally I like to add flax seeds and vanilla as well.
Mix it up.
And put it into the microwave for 2 to 3 minutes.
The heat will soften the apple and the juices will soften the oats. Enjoy this deliciouses of apple with cinnamon while hot!

When I woke up this morning I fancied some Banana pancakes, but didn't fancy using oil to fry them. So I came up with this recipe for healthy, delicious, gluten-free Banana Breakfast Muffins.
For these Muffins you will need:
- 1 Egg
- 1 Banana
- 1 tbsp Almond Flour
- Plain Yoghurt
- Vanilla
- Cinnamon
- Baking Powder
- Goji Berries (Optional)
This recipe is fairly easy. Start by tossing everything, apart from the berries, into the blender ...
... and mix it up really well.
I advice you to use silicone muffin cups because, unlike regular muffins, these won't be as firm and easy to peal out of a paper form. I guess if you used more almond flour it might work but I wanted to try it with one tbsp of almond flour :)
The amount of this recipe is enough for roughly 4 Muffins. Use the Berries for decoration.
Now, at 150 °C, bake those babies for about 20 Minutes.
And viola. There you have it. Delicious, healthy Banana Muffins. I had mine with a cup of Earl Gray tea.

Who doesn't love Chocolate Chip cookies? They just combine everything that's tasty - but with the 'tasty' part being Fat and Sugar and Chocolate ... yeah, they're not exactly on the 'healthy' side. But don't despair! Because I might just have THE recipe for you.
Chocolate Chip cookies - healthified
For a batch of cookies you will need:
- 1 Banana
- Oats
- Raw Kakao-Nibs
- Vanilla (Optional)
This recipe is as easy as it gets. Slice up your ripe, sweet banana and toss it into a bowl alongside all of the other ingredients.
Now mix it all together until you have a nice, sticky ball of goodness.
Depending on the size you want your cookies to be either take a tea-spoon or a table spoon and place individual heaps on a baking tray.
Almost done. Put them in the oven at around 150°C for 10-15 Minutes. It really depends on the size of the cookies and on how you dry you want them to be.
And there you have it! Your very own, healthy Chocolate Chips cookies! They taste amazing with a glass of almond milk.
But keep in mind that they don't keep too long - it's banana after all. Eat them within 1-2 days :)

I'm in the mood for something sweet. Anyone else?
How about a Stracciatella Shake - healtyfied?
For this shake you need:
- One Ripe Banana (The browner the better)
- Almond-Milk (I only had Almond-Drink, which is the sweetened version)
- Protein Powder (Optional)
- Vanilla
- Raw Kakao Nibs
This isn't even a real recipe cause it's so easy.
Throw everything into a blender ... (Here without the Almond-Milk yet) and mix it up. The protein powder gives it a nice foamy texture.
Instead of using chocolate we are using raw Kakao Nibs. This is basically chocolate in its pure form, without the added fats, sugars and milk. It's a bit bitter and tastes more like coffee beans, but it still has that dark chocolate taste and have health benefits!
In the end you're left with a delicious, sweet shake. You could also skip the Almond-Milk and use frozen banana and you would have yourself some vegan stracciatella ice-cream :D

Hello there my loveleys,
I've been gone so long! Things were crazy and work and the weekends were packed full too so I had no chance of preparing stuff for you. I hope I can do more again now that work starts to slow.
I will have a huge dinner tonight and thought I should go easy on lunch - and since I just bought a pack of Mushrooms I came up with:
Filled Mushrooms!
For this recipe you will need:
- Big Mushrooms
- Spinach
- Green Onion
- Rosemary
- Horseradish (Not the cream kind)
- Feta Cheese
- Nuts and Seeds (I used a Mix of Sunflower- and Pumpkin Seeds and Pine Nuts)
- 1 Egg
Start by cleaning your mushrooms. Take out the stems and the white surounding of the opening.
We will later on put these babies into the oven so place the empty mushrooms in an oven-dish.
Chop up the mushroom stems, spinach, green onion and rosemary.
I actually wanted to fill the mushrooms and then top them off with a mix of the cheese and the nuts/seeds - but I ended up mixing EVERYING together in the end.
Now add the egg, horseradisch and spices (In this case salt, instant broth and paprika) to your mix and stir well.
Using a tea spoon fill your mushrooms. Put them into the oven at 150°C for 15-20 Minutes.
And we're done! Don't mind the stiff liquid at the bottom. That's a mix of egg and juice from the mushrooms - and it's delicious so don't throw that away.
This is an amazing, quick dish and can also be eaten cold afterwards.
So there you have it. Filled mushrooms.

I recently bought a Mini-Blender and a new bag of Chia Seeds and set out to create something delicious for tomorrows breakfast!
Chia Yoghurt and creamy Persimmon!
For this delicious recipe you will need:
- Low Fat Yoghurt
- Chia Seeds
- 1 Persimmon
- Almond-Tonka Cream (Optional)
- Blueberries (Optional)
I recently bought some sample packs of Almond-Tonka Cream from my local health food shop and wanted to add it to this dish. I only buy samples of the Almond-Tonka Cream because HOLY COW is it amazing! Serioulsy, I can never buy a whole jar of this stuff or I will eat it with a spoon in one night!
Of course you can use any other healthy source of fat like coconut oil or peanut butter - you might also just skip this part completely.
Next add the yoghurt and the Chia Seeds. I love Chia Seeds. It's not so much about the taste, cause frankly, they don't have a taste, but the texture they provide to your food is amazing. Mixed into liquid they form a gelatinous substance around them and turn even something like water into a pudding you can eat with a spoon.
Mix it all together.
And put it in a jar.
Next cut up your persimmon. If it's very ripe and soft leave the skin on, it's okay. As mentioned, I recently got a new Mini-Blender and am happy to try it out. So I put the fruit chunks in and turned them into a sauce.
Of course you can use every fruit you like and you don't have to turn the fruit into a sauce at all as well.
Pour the Sauce over the yoghurt and sprinkle with additional seeds.
Put on the lid and put it in the fridge. It doesn't take too long for the seeds to turn into pudding but we will leave it over night.
The next morning this beautiful baby was waiting for me. I added some blueberries and enjoyed my Yoghurt :)

What better way to start a Sunday than having some lovely, decadent pancakes? Yes you heard me. Pancakes. But "healthyfied". No added sugar and no flour.
For three pancakes you will need:
- 2 Eggs
- Protein Powder (I used about 40g)
- Milk
- Coconut Oil
- Vanilla (Optional)
Since this recipe works JUST like a normal pancake I guess you need to think about what kind of pancake you wanna end up with before you start.
I realize that Americans use to think of their pancakes as rather small but very thick and light. Germans usually have a thinner batter and use the entire with of their pan for their pancakes, but deferentially thicker than the french Crêpe. Depending on the kind of pancake you want you need to add more milk or some backing powder.
That said, I'm obviously going with the "normal" German Version I grew up with :) So add the Milk, the Protein Powder and the Eggs into a bowl. I got the Protein Powder from a friend. It's egg-white based as far as I know but Whey Protein should work just as well. Also, since the Protein Powder is Vanilla flavored I added some dried Vanilla from my little grinder.
Mix everything up. With his kind of Protein Powder you will notice the batter getting somewhat of a pudding-like consistency, not what you know from a flour batter.
Heat up a little bit of coconut oil in the pan.
Pour in the batter and do just what you would do with a usual pancake.
Flip ...
And Ta-Da! There you have it, Protein Pancakes. I got three huge ones out of that batter and topped them off with some low fat plain Yoghurt and a spoon of my Mom's self made raspberry Jam - but my camera ran out of power right at that moment :P
