Turkey Burger and Fries - The best kind of Fast Food!

What better way to enjoy the weekend than having a Burger and Fries? I love this combo as much as the next person, but believe me, this superb version of this fastfood will blow your mind! Because lettuce and a slice of tomato is just too mainstream...

I present to the: The ultimate Turkey Burger and Fries.

For this recipe you'll need:
  • Minced Turkey
  • Romaine lettuce
  • Mushrooms
  • Pickles
  • Leek (Instead of Onions)
  • Eggplant/Aubergine (Instead of tomatoes)
  • Mozzarella (Low Fat)
  • BBQ Sauce
  • Buns
  • Herbs/Spices
  • Potaos
  • Oil

Before we start working on our Burger let's get the Fries into the oven first.
So: Wash some potatoes and cut them into chunky fry-sized pieces.

Put them in a bowl, add 1tbs of oil and some seasoning, mix well. I used Salt and Smoked Paprika. Put all of this into the oven at around 150° C for 30 Minutes. This will give you plenty of time to finish your burgers.

Now, using the same bowl you used to season the Fries in, take the minced Turkey and season the hell out of it. I used Rosemary, Thyme, Smoked Paprika, Garlic Powder, Salt. Mix well.

Shape the meat into patties and cut up your vegetables. Heat up a grilling pan and grill the patties, mushrooms and eggplant slices.

While everything is frying away cut the Mozzarella.

Tipp: When opening a bag of mozzarella, collect the water in a little container. You can keep the rest of the cheese fresh in the liquid for a couple of days.
Since Germany is the country of bread and bread rolls I choose three different kinds of "buns" for this recipe: A Spelt Bun, Ciabatta and a Soft Pretzel Bun. I'm just not a fan of those soft burger buns.

So after a couple of minutes turn the food in the grilling pan. Doesn't this look amazing?

Take the vegetables out of the pan and add the tops of your buns. Just to toast them a bit. So good!

Turn the buns and put the mozzarella on them. Let the heat melt the cheese a bit.

With the fries almost done and the Turkey cooked to perfection it's time to assemble the burger.

I'm getting hungry just looking at the pictures again!  So good.

Your amazing fries should be done by now as well. Crunchy on the outside, soft in the middle.

And there you have it. The best self made Turkey Burger and Fries you'll have in a long time!

If you're using Weight Watchers: with this bun and a portion of fries, this meal had a total of meager 11 ProPoints. Seriously. That's what one McChicken has alone ;)

I hope you enjoyed this recipe as much as I did. Damn that was good!

Crispy Shrimp. It's like fish fingers - only better!

Who doesn't love shrimp? I know I do. They are extremely delicious and low in calories. Today I will show you a super easy way to pimp your shrimp for a party or maybe to put on top of a salad.

Crispy Shrimp:

For this recipe you will need:
  • Shrimp (250g here)
  • 1 Egg
  • Flour
  • Bread Crumbs (You can make them from stale bread if needed, I used organic Whole Wheat bread crumbs)
  • Salt/Spices/Dried herbs

I went a bit to hard on the shrimp while thawing them in the microwave. I think this should work with fresh or slowly thawed shrimp too but oh well, this is what I had to use. So first off: clean the shrimp - you don't want any poop in them.

Prepare three bowls, one with flour, one with a very well spiced and salted egg-mix - this is what gives flavor to your shrimp. I used salt and dried garlic on them. (I used a bit to little, so I advice to keep in mind that this thin layer of this egg is what gives your shrimp their taste.) Finally, a bowl of bread crumbs.

After cleaning the shrimp start by coating a couple at a time with flour ...

... dip them into the egg-mix second ....

... and finally coat them into the bread crumbs (You could also put dried herbs in the crumbs if wanted).

Put the shrimp into the oven ...

... and bake at 150° C until golden and crispy (For me it took around 15 Minutes). Just keep an eye on your shrimp, I'm not exactly sure about how long raw shrimp will need in the oven. When in doubt try one ;)

If you're using Weight Watchers: Half of this recipe has between 6 and 7 ProPoints.

Folded Zucchini Bites. I bet you never had Zucchini like this!

I must admit I started preparing this dish with no plan whatsoever. I had to make some adjustments here and there to save it (I actually wanted to do it with eggplant but unfortunately it had already gone bad.) The result was pretty good though - and even more satisfying than I expected ;)

So here we go: Folded Zucchini Bites!

For this dish you will need:
  • Zucchini
  • Low Fat cream cheese
  • Tomato Puree
  • Turky Breast
  • Rocket
  • Olive Oil
  • Shalotts
  • Quinoa

 You should also have a ... :
  • Steamer
  • Mandolin
  • Pot

Take half of the zucchini and, using the mandolin, cut it into thin, even slices.

Cut the shallot and sweat it for a moment using a little olive oil. Once the pieces turn glassy, add the Quinoa and water, enough to cover the quinoa twice.

A quick note on Quinoa:
If you haven't tried Quinoa yet you should. It's a grain full of good protein. You can use it for everything you use rice for.

Put the zucchini slices into the steamer...

... and put it on top of the Quinoa pot. Use the steam from the cooking water to steam the zucchini.

Cooking Quinoa is basicaly like cooking rise. Wait for the crackeling sound that tells you the water has evaporated. The Quinoa will be done when it has that yellow ring around it like this.

Should it not be done just add a bit more water and cook some more. In case the zucchini is not done yet, put the Quinoa into a bowl, put water in the pot and bring to a boil to continue steaming the zucchini.

While everything is cooking, cut the turkey breast into strips.

Once everything is done, we start the assembling. So, take the steamed zucchini slices ...

... smear a bit of the low fat cream cheese on them ...

... add the turkey ...

... the tomato puree ...

... the rocket, spices and herbs ...

... and finally the Quinoa.

I tried to stick everything on a skewer and put the parmesan on top -  but it didn't work as I planed and fell apart. But you can still try it if you want to. It could look something like this.

But I ended up putting it all onto a plate, grating the Parmesan on top.

Finally I put it under the grill of my microwave to heat it back up and melt the Parmesan.

Add some flaxseed and sesame and voilà. There you go. Folded Zucchini Bites. Ideal to put into the middle of the table for everyone to try with a fork - or just to eat by yourself.

If you're using Weight Watchers: This meal has 7 ProPoints.

I hope you liked it!
